I think the sweet spot for 1080p is 24" screens (that's the same pixel density (roughly) than 1440p 27" screens of 40 inch 4k screens)

 

A widescreen 2560*1080 would be easier to run however if you don't necessarily need it for immersive wide screen format all the time (or don't mind bezels which are not on the central part with 3 screens) 3 would work better.

It can certainly push 1 panel but it won't reach 144hz with 2560*1080 or 3*1080.
