So for a gaming build with just 8gb of ram. Windows 7 Home Premium 64-bit would be the best?

yeah, the other packs don't really do much more then add useless features

Source: I've used Home Premium, Pro and Ultimate, there is literally no difference except the allowed RAM amount

Service packs? 

Home premium? Pro? Ultimate? 

If you're running more then 16 gigs of RAM get pro, if not get Home Premium. Most of the things on Ultimate & Pro are useless features you'll never use

Technically speaking there is a good amount more than just RAM limits, but from a strictly consumer perspective and not business/IT stuff then I guess that's the only notable one.
