2011 Socket

X79 is a workstation platform, and people don't really need the PCIe lanes or memory bandwidth, so there's no reason to put hundreds of dollars more into that platform.  PCIe lanes don't really matter at this point, graphics cards only use a small portion of the available bandwidth, x8 vs x16 makes no difference.

Pretty noobie question here, but why don't people use 2011 socket more often, especially if your going SLI with support for 2x 16x PCIe sockets? Is there something glaring bad about going with an older generation like a sandy bridge 3820 or 3930K.

because its not cheap and not all of us can afford paying more for high end platform since even z87(1150) z77-z68(1155) is enough for most of the users

It's overall too expensive and not worth it. Why get a 3820 when you can just get a 4770K and a marginally cheaper mobo, both of which have newer technology.

X79 is expensive and you won't need the extra PCIe lanes and the extra CPU cores on the vast majority of gaming PCs.

You don't see socket 2011 being used that much because it's an expensive platform and it's more designed for workstation use, video and picture editing and rendering

Usually it doesn't offer much benefit on a gaming system as a socket 1155 or 1150 system and has a big price difference

3930k performs worse than 4770k in games and cost $200 more.  That's pretty much it.

Not usually.  It depends on the game.

There's still no reason to get a 3930k over 4770k for gaming.  There isn't even really good reason for a 4770k over 4670k.

In theory seeing as it has more PCI-E x16 slots, wouldn't it be about the same? Especially in a multiple GPU solution, wouldn't it pull ahead? Seeing as they get way more bandwidth?

It is pretty much the same but that's kinda the point.  Why pay an extra $300 or so for maybe 2 fps increase.  If you're using quad gpus the extra bandwidth could help compared to using a board with a plx chip, but then you're in the price range where the extra cost won't really matter.
