6700K or 5820K?

So, I'm planning my new pc build, and I can't decide if I should get a 6700K or a 5820K. This new pc will be used for hosting light game servers, such as Minecraft of Terraria, and maybe a bit more singleplayer, intense gaming. I will be rendering videos and running many applications at once, so I'm pretty confident I will benefit with the extra 2 cores of the 5820K. The 5820K also has better upgradability, and I can get a 5960X later if I ever want to. Another reason to go 5820K is because of the limited availability of the new Skylake processors. It is almost impossible to find a store that has it in stock, at MSRP. It is selling on Amazon, but consistently for $400+ and sometimes $500+, not to mention it ships from Japan. I have a budget of around $1000, and I already have a case, power supply, hard drive, and operating system. I know this build is very oddly balanced, but I think it is optimal for my personal needs. 5820k in terms of the CPUs itself is superior to the 6700k no doubt.
However I would recommend getting a better graphics card instead and going for the Xeon E3-1231v3 as the CPU unless you really need a very powerful one. This one is basically equal to an i7-4770 in terms of performance.

Note: You don't need this CPU cooler, but it seems like you want to watercool your CPU so this would be perfect. A simple 212 Evo would be more than enough though ^^

5820k will almost always win in multi threaded applications because of its two additional cores

you can get a used r9 290 /gtx 770 for that money you are paying for the 950

You won't regret the 5820k its a very powerful processor. I love mine, I do a lot of coding and 3D work and it has made my workflow much more efficient and productive since I am no longer waiting for my computer or at least not nearly as long. You can easily squeeze a lot more out of it too with overclocking.
