My 750 G2 has been good so far but one thing that I am wondering about is the ECO mode. Whenever I turn it ON, the fan starts to spin however when I turn it off the fan turns off... I thought it was meant to be the other way around.. is it inverted somehow?

Eco mode should turn fan off under low load.

Thats the thing, When I turn eco ON while idle the fan spins. When I turn it OFF on idle it doesn't spin.

Maby they messed up the on off switch.

It may use less power spinning the fan than it would checking constantly if the psu is overheating

I doubt that's the case. 

 

More likely it's a mistake/the PSU checking that the fan works. Does the fan spin at idle if you turn the system on when it's set to eco?

This. It's likely that the user could flip it to make it work but GG warranty then.

I would email EVGA and ask for a return. You got a flipped switch and messing with that will void your warranty.

My account is almost entirely dormant. Hope you all are having a grand time. Many years of fun were had here.

Why would I even bother getting a replacement? It works either way the only thing that isnt right is the label pretty much

It's up to you, but when I pay that much money for a PSU I expect it to work without issue. If it's brand new it should work as advertised out of the box.
