Preparing to Switch to a Windows machine (Win10) from a Mac. How to backup only certain folders?

Hi! I'm planning to get two 1TB Western Digital drives and I don't want to backup all 2TB of data. I just want to keep relatively important data backed up such as folders containing files for school and photography (my part time job).

Is there a way to backup selectively (folders, not just files) in Windows 10?
