For a more immersive gaming experience I would recommend the second monitor. You wouldn't need an AIO cooler if your not planning to do more than a slight overclock.

Well, it's really up to you. Dual monitors is always fun, but stock coolers will do the job just fine without overclock.

Dual monitors are great for productivity, but not really efficient for gaming. I currently use a crappy 19in 1080p tv I have on my desk as a second monitor and that is perfect for what you actually need for a productivity second monitor.
