I'm kinda new to building pc's, but are the AMD cpu's viable options, or should I just stick to Intel?

Depends what you're doing and your budget. Some of the apus are good for htpcs. But for gaming or anything else really, amd is just really far behind. Especially with skylake coming out soon.

For gaming? Stick to Intel CPUs.

Depending on what applications you are using them for. For gaming deffinatly stick to intel as most games thesedays dont make use of the extra cores. That said if you are a video editor or something then you will benefit from the extra cores.
