Yeti Pro + Pop Filter (Inexpensize) + Reaper (Free) should be all you need. After that it's all about isolating her voice from background noise for a decent recording. You shouldn't have much latency if you're just recording voice.

The AT2020USB is more compatible with shock mounts and should be around the same price point.
