For gaming you shouldn't get more than an i5 4690k because anything more than that you won't see much of an improvement.

1. for a gaming pc, what is better? intel core i7 5820k or 5930k??

2. do you think that with overclocking should i watercool a titan x? if yes what water cooler do you reccomend?

The i7-4790K is currently the fastest chip when it comes to gaming, with the extra threads helping futureproofing further.

A Titan X will provide you the highest frame rates while also skipping all the inherent issues that multi-GPU setups have.

Can't speak for watercooling as I run high-end aircooling myself, though.

Go with i7 4790k and TitanX. Try to avoid SLIsbecause you can always upgread one GPU but if you have at the start 2gpus therefore you cant upgreade with just one more card.

Watercooling? Yes if you are experience builder and if you will overclock that bad boy. Otherwise, great air cooler would do. (Except CPU Watercool it but best is to use custom loop than AIO Watercooler)
