not too many layers but quite a few effects (heavy and light)

If it's not really heavy, you don't need extra vram. 2GB will be plenty.

If what you're rendering consumes enough VRAM, sure.

will average (as in about 6/10 intensity) rendering on after affects utilize the VRAM

That's very abstract. A more detailed example like how many and how heavy the effects you are using would help.

Basically 3gb of vram is enough for a single GTX 780. In the case of SLI, i'd either go with two 770's or  2 Titans.  So like others said, single monitor use a 780, multi-monitors go with one of the those two SLI setups.
