They should fit in the 3.5" bays with offset mounting holes. Or simply "stash" it somewhere in your case.

So, I'm currently in the process of building a computer. I own a Rosewilll Blackhawk Blue Gaming Mid Atx Tower, and I just bought a PNY Optima 2.5 inch SSD. My case doesn't have 2.5 inch drive bays, will it work?

There is no difference between the 2.5" and the 3.5" drives in terms of compatibility. It should work just fine. You would only need to have  a mounting kit for the drive to be mounted in a 3.5" slot. :) Other than that you are perfectly fine.
