yes you can ! the backplate don't do anything for cooling tbh but id still get heat resistent paint.

I got two EK backplates and I was wondering if you could paint them? I wonder wether the heat of the cards would just melt the paint and short the cards out. Or if heat resistant paint would work?

others should clarify but painting backplates with something like pastidip should be just fine

Yes painting it is no problem, I personally love the anodized and milled aluminum look but for painting regular spray paint is not a problem even with the heat, plasti-dip also is another good option. I would be sure to properly prep by if your spray paint however by roughening up the suface with scotch brite and using a self etching primer to promote better adhesion.

You do know that the back of the GPU gets about as hot as the front so the front were the cooler is so the backplate does improve cooling ever so slightly 

eh. it does a small bit, it being metal and a good thermal conductor. but tbh were talking 1-2 degrees of difference here.
