Which are better and why? The Sennheiser HD 598 or the Audio-Technica ATH-m50x?

Neither? They sound the same has cheaper headphones, E.G. the 558's and M40x.

sennheiser hd 598 has less bass and a flatter response, and is open-backed.

Neither is better, each has their strengths and weaknesses. And as Rarity said, you should consider the cheaper but basically identical 558 and M40x.

 

The 558 is open-backed which gives better soundstage. It also has rolled-off sub-bass but is otherwise flatter than the M40x.

M40x is closed and has somewhat boosted bass.

 

Both have removable cables, however the M40x is collapsible and thus more portable.

Yep, I've seen multiple people with grados walking around as well. Of course, by far the most frequent "serious" headphone I see is the M50.
