yes. the g3258 would be terrible.

4 cores 8 thread Xeon will be the sweet spot for price:performance. Being on the H97 platform gives you full SATA III support and plenty of expandability should your needs evolve. You can forgo the SSD to get down closer to $500, but I would HIGHLY recommend having one as a scratch disk for editing. 1x8GB because you could always expand (I sit ~11GB when I'm editing in Premiere). GPU is inconsequential unless you want CUDA acceleration (and your software supports it). This build is barebones for encoding/editing but has tons of options to build out whenever you get the time or money.  PSU is a little nicer, semi-modular and 520w is overkill for the build as-is, but again gives you plenty of support should you want to throw a GTX 770 or higher in there without any issues.

 

*EDIT* Also forgot to mention, SSD is large enough to have the OS on at the same time as being a scratch disk by parting it out -> http://www.wikihow.com/Partition-Your-Hard-Drive-in-Windows-7 (this assumes you're running Win 7 and not Win 8)

Segregate ~15-20GB for the scratch disk and you'll have lightning fast boot times and still maintain fast tracking during editing. You would use the slow 2TB HDD as the final storage device.

Mainly I'll use for Video Editing, near to none gaming!

Very tight budget of 500$, Cant exceed that !

Yes, my mistake. Switched to AMD for quad core. As well 1 TB.

That should be a great build, I have a Xeon 1230 V2 myself that is about the same as the 1231 V3 and it does some great rendering

that looks to be the cheapest H97 from the link you provided.

 

The PSU looks fine, although I have no experience with Corsair PSU's. Only EVGA, Seasonic, Silverstone, and XFX. I would say go with the manufacturer that has better reviews within your country for warranty, parts, etc.
