I currently have both of these CPU's.

The E5400 is used but never overclocked, and the E6750 is brand new.

I will be using an evo on these.

Even after digging around a bit ( http://cpuboss.com/cpus/Intel-Pentium-E5400-vs-Intel-Core2-Duo-E6750) I still can't come to a conclusion.

The "rig" that this is going in is just an old Acer MT Workstation.

Nothing special, 4 gigs of ram, mobo based graphics.

This comp is just being used as a "server" for me and my friends, games will vary depending what we're into at the time.

Which CPU should I use?

Try to steer clear of Cpuboss, and any boss sites as a matter of fact. They are literally, some of the most biased, result skewing, and corrupt sites you can find.for example when testing dual gpu cards they only test a single core on the card, which is why they rate the 780, 780ti, 970, 980, and titan over the 295x2 and titan Z. Not to mention the scores they give cards based on benchmarks are horrendously skewed towards nvidia...

Anyway /rant

If you have to have one of these, get the Pentium, its newer and has very very slightly better performance.

E5400 is wolfdale based, slightly higher IPC and overclocks MUCH better :)
