Please help! I'm overwhelmed with choices.

Over the last 2 weeks i have been trying to find just the right pc for what i want to do.. I would like to be able to game/some video production/ just basic video consumption on youtube. now, i have a budget of $1000 and under. I would like to be able to have the option of working and playing mobile. as is a notebook/laptop but then again, i just cant get past the idea of a desktop due to the ease of upgrades and the ease of customization.. so any help with ideas here would be awesome.. i also lean towards a desktop as i want my 8 year old daughter and 10 year old son to get thier beaks wet with pc building. they love to use them to play games and watch videos on youtube.. so i want them to know how a pc inner workings are layed out so they wont take them for granted like so many kids do...
