Yes, if you are playing games with high resolution textures and have anti-aliasing enabled.

 

If I launch Star Citizen I instantly use 4GB VRAM in the hangar module on very high settings 1080p 16:9.

 

 

It doesn't mean you can't play games at 21:9 1080p with a 2GB Card. You might have to disable AA and lower some VRAM consuming settings.

Yes, you could go over 2GB if the game is demanding enough.

 

But it all depends on which games you play.

Depends on the settings you play at, but generally in such cases where a 2GB card would not be enough, the card couldn't provide the performance you'd want anyways.

 

For example I can play BF4 on my GTX 760 2GB at 4K without AA at 30 fps. But if I turn on AA VRAM maxes and it's not playable. However, having a 4GB GTX 760 wouldn't be playable either. VRAM wouldn't get maxed, but it would still be sub 30 fps at 4K unless you turned down settings... but turning down those settings would also reduce VRAM usage.

 

Generally cards ship with the amount of VRAM needed. Anything that would demand over 2GB of VRAM in a GTX 760 would probably require more horsepower in addition to the extra VRAM. However if you're going to Crossfire/SLI to play at higher res or higher quality settings, then it makes sense to get increased VRAM models.

Having said all this, for 2560x1080 I would recommend an R9 280X.
