Can a 8320 drive 3 monitors?

uhhhhhhhhh the 8320 has no igpu and a cpu doesnt affect the graphics heavily so wut

In that case, it's fine for everything. But don't expect to do triple monitor gaming.

If you use Display Port you can also daisy chain the monitors as R9 280 as DP 1.2. I do that it works fine for two but three in chain sometimes makes the driver crash so I just have one single and one chained with two. That way I only use the two mini dp ports on the card. I however have the R9 280X so not sure the i/o ports are same on R9 280 you have, but if so its an option.

I have had no issue with dual daisy chaining the DP 1.2 if your monitors support its with a DP out i/o. I only started getting random driver catalyst crashed with 3 daisy chained.
