And do I need some more files than the S-off and hasoon2k? except the cm11 m11 itself and the G-Apps?

You don't need S-OFF. Unlock bootloader using HTCDev, flash custom recovery, flash ROM, flash boot.img in fastboot, profit

If you are just installing CM11 then it's easier just to flash boot.img in fastboot rather then having to go through rooting and S-OFF

First you'll have to unlock bootloader (regardless if you S-OFF or not): http://www.htcdev.com/bootloader

 

Then install recovery: http://www.android.gs/how-to-install-the-clockworkmod-recovery-on-the-htc-one-s/

 

Then flash zip in recovery (I assume you know how to do this)

 

Then, from the zip file for the ROM, extract the boot.img file within it onto your computer, then flash it in fastboot: http://forum.xda-developers.com/showthread.php?t=1752270

I don´t know how to do any of this, it´s my first time rooting etc, so I´ll have to read up on the flashing in recovery and rom etc.
