As Watchdogs was loading, the screen displayed solid blue and the PC restarted itself.

This is the first time I'm seeing this.

None of my parts are overclocked.

No, it was solid blue... The entire screen was just blue. 

Has the GPU even been replaced in this system and if so, were the drivers properly uninstalled (if necessary)?

MY GPU is soldered in.... If my GPU is malfunctioning, I have to send it to Samsung... (Which would fucking suck, as I never experienced a problem with Samsung products)

I have an AIO, while my specs are available under my profile.

was it flashing?

i had this problem before when i first load watch dogs on my laptop, updated to a new patch and drivers for the laptop and it work for me

Solid.
