I suggest single 980 (SLI tend to have issues with games that are not optimized )

Before you decide:

1) Would you be playing games that SLI would benefit?

2) Hows the PSU? your going to need more power

3) Is your Mobo SLI ready?

4) Got room in your case?

So there isn't a "right answer" but really a right one for you.

You are in the same boat I am.  I am leaning towards staying with an SLI setup for the performance.  I could in theory stay with my existing SLI setup for longer, but with triple monitors and new monitors on the horizon, I think moving to a minimum of 4gb of ram on the cards is worth it in itself.  Back on track though, at a cost of $125-150 extra(rough figures, not completely accurate), depending on what card variant you get the performance is better than one 980.  Techpowerup did a review with benchmarks with a 970 sli setup.  See the link below.

http://www.techpowerup.com/reviews/NVIDIA/GeForce_GTX_970_SLI/

I have been running my 670 SLI setup since 600 series launch and I don't think I have any real SLI issues with any games.  That doesn't mean there won't be issues with the 900 series right off the bat due to drivers not being 100-percent optimized at this point.  Based on the benchmarks in the above link, I find it quite difficult to not go with the best price to performance cards.  In this case the 970's.

Depends on what games you are playing. A lot of games don't have great scaling with SLI. Obviously things like Battlefield will easily be better with SLI but games such as World of Warcraft or League of Legends will benefit more from the single GPU. I have used SLI recently, mostly it's pretty good but some on release games such as Dead Rising 3 PC to give one example will not support it straight away.

Perfect,

Good call there on Dead Rising 3.  I'll take that one a bit further though.  Dead Rising 3 PC has enough trouble running in general on Maxwell.  See the issues with the mobile 800 series.  Still can't get that game to run on my 870m.  Back on track though, you are right, some games benefit from single gpus more than others.  I have noticed in WoW, micro-stuttering in SLI albeit not consistent, but still does exist.

I may head over to microcenter today and pick up two EVGA 970 SC cards.  See if they have any left in stock though.
