Get the EVGA SC version. They have the ref coolers which are excellent for SLI.

I might do a build with 3 GTX 770s in SLI, but I'm not sure how to cool these cards. Is watercooling necessary? What would be the best case for it (I'm thinking of the 760T)? Thanks.

Well, it would be best to go with blower style cards. Open designed cards will just circulate hot air around the case. 760T is a good case for it. 

 

Watercooling would definitely help keep temps down, but not necessary.

diminishing returns from the 3rd GPU is insane..MANY games won't use a 3rd card at all in fact most of them won't so your 3rd card will be sitting there doing nothing MOST of the time...get 2 more powerful card instead, you should look for two R9 290 instead...also you get more memory and faster memory on those.

And I'm running FSX on that PC which prefers NVIDIA, so AMD cards are not an option.

Water Cooling is not necessary, but neither is 3 way SLI, you will be better off getting 2 more powerful cards as the performance you get from 3/4 way sli is definitely not worth the money.

Meh I would just get dual 780s or something

 

If you ever want to play  a game that does not support SLI you only have a single 770

then go with two GTX780, it's much better.

I'd prefer something with 4GB VRAM, I might switch to 1440p.

Don't get the 4GB version of the GTX 770, the card is not good enough to use it all. Get R9 290 Crossfire instead.
