I'm from New Zealand and you cannot buy the 780 ti the is most common for linus to use in new zealand, so i was going to buy 2 760's and sli them, but i had an idea to buy one of the 780 ti's and get it shipped over because it works out about the same price. I'm just looking for other opinions in the matter of what i should do.

Just get the 780 Ti. Two 760s will be as powerful, but will put out more heat, consume more power and most important of all will not have any upgrade path besides going for a third.

 

That being said, I would wait a few weeks until after Game24, as NVIDIA are expected to unveil 970 and 980 there.

One powerful card always supersedes weaker cards in sli.

Oh so you want the reference card. Well I can't really help you with that, sorry. Personally though you're better off getting an aftermarket cooler, because they're quieter and run better than the Nvidia one. The Asus Direct CUII, Gigabyte Windforce and EVGA ACX cooler are all good options that are quieter and cool better (the Asus option is particularly good - I got an Asus 760

 

When you ask about SLI'ing with multiple monitors vs single card, I assume you're talking about 2x760 vs 780Ti? Makes no difference compared to single monitors. However, talking about SLI generally - you're better off with a 780Ti because even if the performance is slightly better on 2 760s, a single card is always preferable to two cards due to power consumption, heat output, and most importantly - consistently. You might find 2 760s are faster in some games, but then the SLI drivers give you trouble in other games and you have to run on a single card for that game. As a general rule of thumb, you should always buy the best single card you can afford right now, and only go straight to SLI if you're already buying the most expensive card you can (e.g. if you already have enough money for two 780s). Then, if in x years time you find that you want more performance, you can add another 780Ti rather than two more 760s.
