I am looking to pick up an ssd, maybe two.  I have looked at so many different options from crucial, to intel, to corsair, and I have no clue what I want to pick.  I am not looking for the most exspensive best drive, just a drive that for the money is worth it.  Let me know your thoughts at the moment. :)

Get the 840 EVO if you're on a budget, if not get the Intel 730 series, they're amazing and extremely reliable.

Samsung 840 Evo, can't go wrong.

The Pro is good if you have money to spend though.

Crucial MX100. It's a great SSD, and has really good performance. It's not the fastest, but its not designed to be. You can get a 512GB drive for around £150, which is outstanding.

Now with so many options what would you recommend.  Two smaller in a raid setup or a single large drive?

I would say single large drive.

As for drives. Samsung 840 EVO if you're on a budget, 850 Pro if you are not (10, yes TEN years of warranty!).

One large drive would be a good move, but backups would be necessary. It provides less points of failure compared to a raid array, this it will be less likely to result in data loss. I would suggest a crucial MX100 for a budget choice up to 512GB, and the 840 evo for larger storage. At a higher price, the 850 pro is the best choice, as @GlassBomb said, due to the warranty. It's basically a lifetime warranty as it's very unlikely you will use the drive in 10 years time.

Of the "good ones", pick whichever one is on sale/cheapest whenever you make your purchase.  You've done some research so you've a good idea which one(s) not to get, and that's the most important thing here.   The crucial MX100 256GB is generally available for 100 dollars or so.
