Was going to but to be honest I prefer 2 780 tis

What ever setup you eventually, get it will be a monster of a PC!!  :-)

 

The build KPZ put together is very nice and you can't go wrong with it.  I would recommend something very similar.  What would I change?

 

Based on the Linus' benchmarks you may want to go with a H110 or H220 for a cooler: https://docs.google.com/spreadsheet/ccc?key=0AlPSGh26Ne0XdHZweHoxckRqazBvM0RTMW5GSFZNRmc&usp=sharing#gid=0

 

If possible go with higher speed RAM but keep latency low.

Don't see the point to have 2x 1TB SSD.  I would get 2x 500GB and put them in RAID and add a HDD of 2TB.  You save some money here.

Lastly I would go with 140mm case fans for a quieter experience.
