Would the CM Stryker be a better case when it comes to cooling?

If you want the best cooling go air 540. You won't gain more than 1c-2c from one case to another usually, but in the air 540 you could see 7c-8c less.

lol. Just... no.

Would that make much of a difference unless i'm planning on doing a crazy OC or something?

Keeping your components cool is always good. However, the idea that the air 540 is some masterpiece of cooling is a joke.

Agreed there are alot better cases out there for cooling...my nzxt switch fully loaded with fans was really nice and cool....even with a FX processor it was at a stable 87 degrees F.
