I started playing Watch Dogs and running around/looking around is really choppy, my i7-930 CPU seems to be doing fine, I doubt it's my GTX-560Ti because I've even tried low graphics settings. So I'm thinking its my lack of RAM at 6GB running at 80+% during gameplay? School me if I'm wrong.

 

I have a ASUS P6X58D Premium with G.SKILL F3-12800CL8T-6GBRM. Can I get away with adding just 1 stick of maybe 2 or 4GB?

If I have to purchase another triple channel then so be it, but what specs have to match and what specs don't matter? Cuz I'm having a hard time finding the same spec of RAM.

Monitor the usage of your CPU, GPU, and RAM and see which one is maxing out.  If you're running out of RAM while playing then adding that little bit more should help.

You can get away with just adding one stick of RAM in your case. However, you might consider buying a new set of three 4GB sticks, as there might be compatibility issues with having non-matching sticks of RAM. I didn't back when I used DDR2 on my old rig, but you never know.
