Theres way too many. Which linux is most stable? Its going to be installed on a HTPC.

You mean which distro?

 

Ubuntu is the most used distro, so I'd go with that or Xubuntu.

Ubuntu is really popular, but I know a lot of linux gurus that highly recommend Mint instead. I haven't used either, but I like how Mint looks much better :)

They are both 'stable' more than windows or apple will ever be.

Elementary os luna.

Based on ubuntu but looks much nice and cleaner. 

Almost all of the major distros are more "stable" than windows or osx

The most stable is Debian, not Ubuntu. Ubuntu is based on Debian, but updates more frequently. The distros designed for enterprise or servers (like Red Hat) are also very stable. However, you probably want something with HTPC features built in instead.
