is this build good enough? or would you change anything?

Yes I'd get different M.2 than 990 EVO.

And different 1000W PSU, unless the Corsair one has like 10 year warranty or something interesting going on for it. (it's not bad PSU if it does, there are just cheaper options that don't explode either)

Thermaltake Toughpower GF A3 - TT Premium Edition

Cooler Master MWE Gold V2 ATX3.0

ADATA XPG Core Reactor II

MSI MAG A1000GL PCIE5

Do I not need 1000w? I was under the impression that I needed all that juice especially if I try to overclock in future? Also I don't care about corsair, I just want a good brand I can rely on

I'd first research if Overclocking parts that came out in 2024+ are even worth overclocking and possible without needing Liquid Nitrogen and such.

Check if case comes with fans, check how many fans you'll have,

AIO installs on entire roof/front of the case, so that's 3 fans covering entire amount there.

Thermalright TL-C12C X3 66.17 CFM 120 mm Fans 3-Pack

ARCTIC P12 Slim PWM PST 42.1 CFM 120 mm Fans 3-Pack

Check out Thermalright AIOs, if you're from US, they can be cheaper and or similar to ID-COOLING, but stats wise seem to be quieter on similar fan speed:
