No peripherals included in budget- eventually I want 2 monitors but currently only have 1.  I'm willing to go with a single 1TB SSD if the money for the second could be better allocated elsewhere. My main concern at the moment is whether the CPU cooler and GPU will fit in this case- there's about 5MM of clearance above the cooler which doesn't seem like a lot. I plan to buy within the next 2-3 weeks.

Many people are going with DDR5 6000 CL30 or a little better for Ryzen. The lower the Timings the better.

Also it's not 2015 anymore, so get 32GB of RAM.

6800 is 40$ cheaper and has 4gb of extra vram so even if the gpu perf is similar that extra vram and the cost savings makes me prefer the 6800 any day over the 7700xt
