There are so many different story-based games from 'Valiant Hearts: The Great War' to The Last Of Us.
It will hold it back slightly but nothing I would be concerned about

Assuming you're turning up graphics settings, it's probably not holding it back too much. Most single player story driven games tend to be more GPU intensive than CPU intensive.

The better question is: are you comfortable with the gaming experience a Ryzen 5 3600X can provide?

None, Nothing holds down story based games.

For other games, they're a good pairing.

Yes. 1440p gaming is another Tier of money spending, and requires the hardware to push it.

Otherwise stay 1080p and the 6600XT.

For 'simple' story games you'd be fine with a 6600 XT, even at 1440p, but as Hinjima implied, they're not all equal, since some are very light and other games are very demanding.

I'd generally advise against upgrading within the same generation, unless you're getting a good deal for your current card, as it is rarely good value. E.g. a 6800 non-XT is 54% faster according to TPU's database and while that's significant (especially if you're playing at 1440p), $400 for 54% is really not.. great. In a few generations $400 will get you something much more than 54%, though obviously if you're really struggling to get games playable @ 1440p right now, then that changes the "worth it" calculation.
