will this NVMe to SATA Adapter work with this ssd? I know it will be caped at SATA 3 speeds.

This would likely work; however, since you adapting back to sata. I dont see why you would use a NVME SSD and bottleneck it with the adapter. 

Why not buy a 2.5inch sata SSD in the first place and skip needing to buy the adapter?

I already have this ssd so it makes more sense to use this Adapter than to buy an other sata ssd.

Ahh I see. is this for a laptop or a desktop? If its a desktop then maybe go for a pcie card so you'll get the extra speed

I'm pretty darn sure this won't work. This adapter is for a sata ssd, and the linked ssd is nvme/pcie only.
