Why do you want to undervolt it to begin with?

Welcome to the curve optimizer, where this type of this is very common. Stability under light loads/idles are incredibly unstable, while stress tests pass indefinitely.

Core Cycler can help, though personally I'd rather just lower all cores by 5 and not think about it.

You can spend the time in Core Cycler or you can do what I did this time around with 7800x3D and just wacked it on -20 all core and went about my business. Hasn’t crashed or exhibited any unstable behavior in the last 4 months or so. If it did, I’d just lower it by 5 and repeat.
