Main difference between DP 1.4 and DP 2.1?

If your GPU is Nvidia, no need to bother on DP 2.1 as Nvidia not support. Currently only AMD 7900XTX series support. 

 

Also only 57" Samsung Odyssey Neo G9 required DP 2.1

 

In summary,  DP 1.4 is far than enough. 

Is the main difference between the DP cable 1.4 and 2.1 just more bandwidth? Is it worth the $30-$50 price hike? Thoughts?

Have you tried turning it off and on again? Maybe Restart it?

To be clear, the main difference between those DP versions is bandwidth, yes, but not the cables. Displayport does not rate its cables in that manner (1.2, 1.4, etc..). The difference is in the DisplayPort spec. More to learn here: 

 

 

If you are hooking up a display with a specific resolution, refresh rate and bit depth that requires a certain amount of bandwidth, you my require a better cable. DP cables are rated by their bandwidth capability:

HBR3 cables are quite common today.

just a regular gaming monitor. it has a 75hz refresh rate.

So 1080p 75Hz? Nearly anything you buy will work.

Display usually come with its own cable that works for its maximum refresh rate and highest resolution, you shouldn't have to buy any monitor cable. TV is another story, but they shipped with HDMI, not DisplayPort
