RAM speed is capped at 2400 MHz even though I bought 3600 MHz

Did you take out the 2400 sticks? All the RAM in your PC will only run as fast as the slowest DIMMs you've got.

There might be something in the setup tabs, keep poking around.
Just note that your processor is only rated for DDR4-2666, so I wouldn't expect more than that.
