Thanks for the feedback on the PSUs'.  I was looking at those 3 brands and just need to decide on a speciific unit.

 

I need to decide on a motherboard -- do you know if I should go B series or Z series for this?  I might be running docker containers at some point on this.  Ideally at some point in the future there will be a GPU for plex transcoding in this too if the CPU is not enough.

 

The last thing I need is an SFP+ NIC.  I've been reading online people have been having lots of issues with the Intel X520 Cards.  Do you have any suggestions for this?

I’m sure either would be fine for the HBA. I believe I personally run the first link you provided, but LSI cards are basically all the same.
 

Id get whatever mobo is cheapest that supports what you need it to support. Chipset doesn’t mean much for homelab, and overclocking isn’t part of the equation.
 

I run a melonox conectX2 card myself, with fiber transceivers for 10gigabit. I assume x3’s or even x4’s are cheap enough these days, and if you want to go to rj45 I’d look at fs.com. But I just go direct fiber from my NAS VM to my desktop, with connectx2’s in both.

For some consumer friendly cases that look good for rackmount, company called Sliger has some that fit all types of depths.  Kind of on the expensive side

Rosewill also has some cases that may fit the drives better.

Is this going to be a bare metal truenas setup? If so, you don’t need an HBA and you can just use the mobo’s sata ports. 
 

If you want an HBA anyways, look at h310’s or their newer versions (I and friends use H310’s so that’s all I am familiar with). It will need to be flashed to IT mode, which you can do yourself or can buy it already done from eBay sellers. You can usually find them on eBay pre-flashed with SAS to SATA cables for ~40-50 bucks. 
 

Get a quality PSU; Corsair RMx or RMi are good options, high tier EVGA or seasonic are just as good as well. Don’t cheap out on a PSU… PSU’s can take other sorts with them when they die. It’s worth spending good money on a PSU for a server. 
 

Also, remember, it’s hard to add more storage to ZFS once you build out your vdevs. Make sure you have enough storage capacity for quite some time, and have a mental plan on how you would upgrade if every needed. You can either replace all drives in your vdev with larger drives, once all are replaced you will gain the new larger size, or you can add vdevs… but each vdev requires its own redundancy, so just think this through if you haven’t already before you set things up.
