i'd say just give xubuntu a go. imo the ui is fairly easy to pick up for windows users, and basicly any guide for ubuntu applies to xubuntu too.

 

for a minecraft server you can just use 'screen' to run it in the background. for jellyfin i'd have to do some googling when i'm not on my phone.

I'm building a server for Jellyfin and Minecraft and such. I don't have an OS, would you recommend using Linux, or is it just easier to use Windows 10. I have an old windows 7 laptop that still has the Windows 10 product key, is that more as to what I should use? If I should use Linux what would be the best distro? To be clear I’m running an Upgraded HP Elite that doesn’t have an OS, the old laptop is for ripping an OS from.

I've got plex running on a windows machine and it's "fine" was a very easy setup, very friendly, although occasionally buggy with connecting to server and staying connected (IP config and such) probably happens .5-.75 times a month, usually clusters so fine 85% of the time, and aggrevating when it clusters. 

 

I'd probably go Linux for the server(s), much better troubleshooting when something goes wrong and you can customize resource allocation better.
