RX 6800 XT has a 750-800W recommended power supply depending on the model. Going above that isn't a problem, however a good rule to follow is the 50-65% loading for maximum efficiency.

If you already had a 1000W power supply in mind, its sort of the sweet spot for any system in 2023. A 1000W can comfortably power any system, even an overclocked 13900k and RTX 4090 (though you should elect for a 1200W at that point). Where you do need more is using an RTX 3090ti and overclocked 13900k, since the 4090 doesn't have the power spiking issues that RX 6000 and RTX 3000 series had.

Thats much more than needed, but its good for future proofing, even a 750w or 650w would be 'fine' but 1000w will allow for future upgrades since its one of two or three pc parts that can be somewhat 'futureproofed'

more than enough. 750-850W should be fine unless if you do need a lot of peripheral power either from SATA or Molex for some reason.

Something else to keep in mind, specifically with modern video cards, are transient spikes. A power supply might be able to handle the total load of a system if it's pretty consistent, but once it starts to get bumpy, it might choke due to having insufficient capacitance present.
