Need feedback on new build

Hi everyone! I’m building my first gaming PC and I would really like to hear your opinion/suggestions. I’ve posted some time ago, but I added some changes to the previous build so I’m posting again (I hope it’s not too bad)

Budget (including currency): ~12,500 PLN (~3,000 USD). Current build already costs around 13,000PLN.

Country: Poland

Games, programs or workloads that it will be used for: Mostly gaming: Star Wars Jedi: Survivor, Apex Legends, Baldur's Gate III, Stellaris, other AAA titles. I also program in my spare time (if it makes any difference).

I have 2 builds for you, 1 Intel and 1 AMD. I had to switch out the RAM as it was just way too slow and you have room in the budget for 64GB RAM if you wanted. I also got you a 7900XTX for only $40 more, I highly recommend the AMD build as it has the new 7800x3D CPU and double the RAM and still in your budget. I have been building PCs for 30 years so if you have any questions please ask.

Thank you very much for looking into it! This AMD build looks really nice! But unfortunately the average prices in Poland are around ~15% higher, and because of this it’s over my budget. Let me go over it part by part:
CPU: AMD Ryzen 7 7800X3D 4.2 GHz 8-Core Processor - I saw that the benchmarks are in favor of Intel, but the in-game performance is significantly better with AMD.
CPU Cooler: EK EK-Nucleus AIO CR240 Lux D-RGB 72 CFM Liquid CPU Cooler - It’s hard to get this one in Poland. Also, I got some recommendations from friends for the ARCTIC Liquid Freezer II 280 72.8 CFM Liquid CPU Cooler. Would it be okay to stick with this one?
Motherboard: Asus TUF GAMING X670E-PLUS WIFI ATX AM5 Motherboard - I’m thinking about putting 5 additional fans (2x bottom, 1x back, 2x front or top depending on where I put the AIO) in total and this board has only 4 slots for fans. Would that be a problem? I heard that some fans can be daisy chained so it would do in this case.
Memory: G.Skill Trident Z5 Neo RGB 64 GB (2 x 32 GB) DDR5-6000 CL30 Memory - Since I am already over the budget - do you have any alternatives (32GB in total)? Or is it really worth adding ~400zł more to have this 32GB extra?
Storage: Acer Predator GM7000 512 GB M.2-2280 PCIe 4.0 X4 NVME Solid State Drive - I’m assuming that this would be a separate disk for the OS, but I’m not sure what the advantages are. Maybe it would be good to pass it to save some budget?
Storage: Acer Predator GM7000 2 TB M.2-2280 PCIe 4.0 X4 NVME Solid State Drive - Those drives are hard to get in my country. Should I stick with Samsung or do you have any other recommendations?
Video Card: Sapphire PULSE Radeon RX 7900 XTX 24 GB Video Card - This card is around 1k PLN more expensive. I can consider buying it if RX 7900 XT is a bottleneck for this setup.
Case: Fractal Design Pop Air ATX Mid Tower Case - Seems like a good way to save some money, but it a bit concerns me that I cannot add fans at the bottom. What do you think about the case recommended above? (Lian Li LANCOOL 216 Mesh ARGB)
Power Supply: Thermaltake Toughpower GF3 TT Premium 850 W 80+ Gold Certified Fully Modular ATX Power Supply - Here’s a PS also recommended above (MSI MPG A850G PCIe5.0 850W 80 Plus Gold). It’s 200 PLN cheaper. What do you think?

So applying your recommendations and sticking with GPU, SSD and Cooling picked by me the whole build would cost a bit over 13,500 PLN
