Need help with choosing a GPU

I’m trying to choose a new GPU that won’t require me to change my PSU or that my i7 6700 won’t bottleneck to badly. I’m trying to decide between the 3060 12gb, 2080, or RX 6700 or XT

i dont know if this is accurate or not but, i think 3060 will do.

If you're playing in 1080p, all those choices would be bottlenecked by the CPU, worst one is RX 6700 XT. However the other choices offer bad value for money.

So, if you intend to upgrade your CPU later, 6700 XT offers the best value (US pricing), therefore the best choice. If you don't, then go with the weakest one, which is RTX 3060 12GB, but RX 6600(XT) is usually cheaper than 3060 12GB, and faster, the PCIE interface is mostly a non issue.

So, either 6700 XT if plan to upgrade CPU and if not then RX 6600 or XT, value for money is everything.

Well I’ll guess I’ll have to decide between the 6600xt and the 3060

Disagree on taking 3060 over 6700 XT just because the 6700 XT is more bottlenecked. The 6700 XT will still be faster even when cpu limited because of the lower driver overhead in DX12 games and they sell for nearly the same ~$360 price. Though it's a waste of money with such an old cpu and best bet for 1080p would be RX 6650 XT which goes for $260 or so nowadays and has the advantage of AMD drivers also. Will probably perform the same as a 6700 XT at 1080p with an i7-6700. At 1440p I'd probably get the 6700 XT. Wouldn't touch Nvidia cards with a ten foot pole when running such an old cpu with how lousy their DX12 drivers are compared to AMD's.

I did not take 3060 over 6700 XT, I advised 3 choices, 2 of them are not among OP's choices.

What you are asking actually is "Which is the slowest GPU i can buy?" and that makes no sense. What are you currently using? 

The 3060 is nowhere near the same class of a GPU as the 6700XT or the 2080. It's basically a $200 that Nvidia wants people to pay $450 for. Absolutely atrocious one. 6600XT is technically the same class as the 3060, but is faster. 

What i would do however is upgrade the CPU to something newer like the 7600X and then think of the GPU. It all depends on your budget. This i7 is ancient enough to bottleneck a GTX 1080 with FSR on.
