Im looking to upgrade my CPU from a Ryzen 3 3200g. I’ve found some second hand ones for pretty decent prices but I’m not sure the difference in performance between the following 

Ryzen 5 2600x, 3600x, 3600, 5600x and Ryzen 7 3700, 2700x

 

This would be for gaming as well as 3D modelling for engineering

You would need to check with your motherboard manufacturer what CPU's are supported and what bios versions that you would need, most of them do support all of them but better to be safe than sorry or installing a new CPU and it not booting. Worth the saving of a head ache.

 

For gaming you would want the 5600x or a 5800x3D (depending on budget) and as you do 3d modelling a 5900x would be a better shout.

Youll want to specify what program you use as that pretty much will dictate what the performance increase will be.
