1. Budget & Location
I'm located in Canada but I can buy parts in the US if they're cheaper.
Budget:
$3000 CAD or $2700 US
 
2. Aim
 
My new job requires a fair bit of work in Adobe Premiere, After Effects, etc.
I'm not much of a gamer and the really aim is for a work station.

3. Monitors
I already have 2 x 4K Samsung U28D590D Monitors which I intend to use. 

4. Peripherals
No need for any peripherals..
I'll be running Windows 8.1. I've considered setting up a dual boot system running Mac OS.

5. Why are you upgrading?
I don't even have a desktop at the moment

If you are not interested in gaming I would consider swapping the 780 for a Quadro K4000, 10 bit color, and better drivers for workstation use.

A quadro cant run multiple monitors plus he will get cuda from the 780 give me a second to make something

I went with this monster video card because you are using 2x Ultra 4k monitors.  The 8GB of VRAM should come in handy.  Regardless of what you end up doing, I think Crossfire or SLI is going to be required for two ultra 4k monitors.  I have also heard, AMD cards are better at task-oriented programs like the ones you intend to use.

 

Case is such a personal and aesthetic choice.  I went with a less expensive, but very popular and feature-rich case that is suitable for your needs.  I went really overboard with the video card, so I had to find ways to cut costs elsewhere.

 

I added in a 1TB HDD, wasn't sure if you would actually need it or not.

 

If you are going to create a "Hackintosh"  here is a handy guide for compatible components.

It is not necessary, the alternative is buying 2x R9 290X and running them in crossfire.  I selected the 295X2 because it is easily the most powerful single GPU on the market, you have this monstrous budget, you deal in graphics, and it is water cooled out of the box for excellent temperatures, something that the 290Xs tend to have issues with.  Here is an alternative that doesn't cost quite as much:

2,606,720 pixels. 2x 4k is about 16m pixels. Do math, thats about .00008 MB per pixel. Do more math, you would use about 1280MB which is just over 1GB of vRAM.

I run my K2000 with dual 1920x1080 monitors, which I openly admit is a different horse all together.

 

However I see you claimed that a K4000 does not have the necessary VRAM to run two 4K monitors, then turned around and recommended a 780. Both these cards have the same size VRAM, 3GB.

 

I stand by my recommendation of the K4000 as you also get CUDA, an infinite run time, double precision, as well as a boatload of validated programs which I suspect Adobe is one of.

 

Normally I am a large proponent of consumer level cards, but to me this is certainly a perfect fitment for a Professional level device such as a Quadro.

You are correct the sheer volume of CUDA cores on the 780 will make it perform better in a purely CUDA accelerated application. I simply contend that the Quadro K4000 offers several advantages that make a real difference in a workstation machine.

 

Quadro's are all rated to run at %100 load 24 hours a day, indefinitely. This is not something that everyone will utilize but what it does display is the level of quality control and design attention that is paid to the professional cards is substantially higher than that paid to the consumer cards.

 

Now if you are suggesting to run a Quadro in conjunction with a 780 for higher levels of CUDA performance, I would agree. I just don't see that happening at within the budget. :)
