Games, programs or workloads that it will be used for: Mostly 3D modeling and rendering (C4D, Corona, Octane ect.), and a little gaming on the side

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): I plan to use 2 monitors. Now I have 2 1920x1080 monitors on 60Hz, but i was thinking about upgrading my main monitor to a 4k one.

My old computer is out of the picture to salvage parts from it.

Open to any suggestions. but keep in mind that, I'm a Uni student so my budget is limited.

I know the pcpartpicker shows $1700, but the exact build i plan to put together fits in the $1600 budget.

I would go Intel 12th gen for faster single core performance. The 3D modeling applications you are using are probably mostly single threaded, so the Intel should do you better.

 

For gaming the 12600K should also be a bit faster.

The motherboard here is a bit too much for my budget.. (sadly)

 

I was thinking about changeing it out for an ASUS PRIME B660-PLUS, but the be quiet site says, that they dont recommend the Dark Rock Pro 4 for LGA1700 sockets. I know that they ship out free adapters, with proof of purchase, but I don't know how long it takes to get here.

 

Are there any good cpu coolers to change it out to?

No problem. Sure, you can get a B660 motherboard. The Asus Prime should be fine, although the MSI Pro B660-A is better if it fits your budget/you can find it. The 12600K is still worth getting over the non-K version due to the extra 4 E-cores.

 

In terms of coolers, the Deepcool AK620 and the Scythe Fuma 2 and Noctua NH-D15 perform similarly (meaning really good) to the Dark Rock Pro 4. The Arctic 34 eSports Duo is not far behind. In terms of price/performance, I think the Deepcool AK620 is the best, so I would get that if it is available in your area.
