What are my chances of being able to set up Home Assistant on an _old_ raspberry pi?

You should be able to. The main issue would be performance being low.

 

You could also buy a "insert random pi competitor here" device and use that.

Home assistant gives instructions for using a raspberry pi 4, or alternatively pi 3, when setting things up. I on the other hand have a old original raspberry pi model b, rev. 2.0;  a bluetooth dongle; an ethernet cable; and a can do attitude ... Just checking if this route is even a possibility or if I'd be better off converting some other old x86 system to do the job, (since it doesn't seem like I'll be getting a newer pi for anything less than my right kidney.)

I ran hassio core on a 512mb orange pi zero up until few months ago, along with samba and transmission. Not a single problem, you can do it.
