I chose the 6500 XT because it was the only GPU in the budget. It's not great but still the best value with current pricing probably.

Maybe add 50 bucks to get an rtx3050

I have an ASUS G14 2021 with Manjaro KDE and I am a professional Linux NoOB and also pretty bad at General Computing.

I wouldn't get the 6500xt. You can build the PC if you want, then check daily for better deals on graphics cards. It's hard to find the most popular cards, but by checking enough retailers you might be able to find a better card for close to MSRP eventually.

They are 600 here, or 550 but that one has always been out of stock. I don't think it's worth nearly 300 more. Nvidia is just so much more expensive than AMD here.

So it's better to get the 5600G one and wait for a good deal on a GPU?
