Building my dream pc, which PSU should I get? 850w? 1000w?

These are the current parts I have:

 

• Intel Core i9-11900K
• ASUS ROG STRIX Z590-E
• CORSAIR Dominator Platinum RGB 64GB
• ASUS ROG Strix GeForce RTX 3090
• SAMSUNG 980 PRO M.2 2280 1TB (2)
• CORSAIR QL Series, iCUE QL120 RGB, 120mm (9)
• LIAN LI STRIMER PLUS 24 Pins
• LIAN LI STRIMER PLUS TRIPLE 8 PIN 
• CORSAIR iCUE LS100 Smart Lighting

 

I manage to get a CORSAIR RMx White Series RM850x for a great deal, however, is this enough for power my system and all its components without worries?

I would go for the 1000W, at least. 850W may be good enough to handle the 11900K and 3090 on their own, even during those quick power spikes, but with all the extra fans and lighting you plan on adding, you'll definitely need some room to grow. At that point you're more likely to find higher efficiency PSUs anyway. Gold is good, but it seems like it's quickly becoming the default.

Don't use extensions like the Strimer Plus in a high-end system. It's causing issues like instability and shutdowns because extensions makes the cables longer and the voltage lower. Longer cable is more resistance is lower voltage at the end of the cable.
