4k or 7680x1440?

Tola

I'm wondering which one to go with. I've been told playing with 3 1440p monitors is hard ti do because of peripheral vision. Which one would you say would be best to get for gaming. Ik I will have to spend alot on GPU's

Three 27" monitors are huge. If you don't have the space, I wouldn't suggest doing this. You could also get a 4K monitor for less than three 1440Ps. Both will require a lot of GPU power. I would probably get one 4K if I can choose.

Dell UP2414Q is that a good choice? If not could you recommend one under $3000?

That monitor is great. I would say that it's on of the best monitors out there right now, too. The only downsides that I can think of is that your desktop is going to look tiny since it has such a high PPI.

Can't you enlarge the icons?

Yeah, you can, but it's going it might even be smaller than you might be used to.

Try to look at the AMD cards. They've got more VRAM so it's going to be better for higher resolutions. Also, if you want to go for AMD, get non reference models if possible.

I already have one 780Ti

Than get another 780Ti, even one would be quite good. 3 imo is overkill for even gaming.

With SLI 780ti's you would be looking at maybe 40fps on ultra at maximum settings. Then again, you won't need AA or anything similar since with a resolution so high and with such a high ppi, you won't even notice the effects of AA anyways. Then again, you might even be looking at 3-way SLI with 780ti's if you want to get butterysmooth framerates on every game all the time. It is reasons like this that people say 4k isn't here yet, because it isn't. (Realistically)
