It kind of just depends on which route you want to go to:

 

-Would you want the better integrated graphics of the 3570k? (Intel HD 4000)

-Would you want to save some money by going with the 2500k?

 

They are similar spec, but one is a newer architecture then the other. 2500k is sandy bridge and 3570k is ivy bridge. Overall I have read that sandy bridge was a lot easier to overclock because ivy bridge's CPU dye was smaller causing more heat. But honestly if you're only overclocking to 4.0 ghz then you'll be fine. I personally think you should get the 3570k since you kinda 'get more out of it' in one way or another.

3570K is around 5% faster clock for clock. 

Get a 3570K, it also uses 20% less power and got a much better iGPU.

The 3570k. You'll be able to make up the performance difference with how much the 2500k can pull away but at a low clock like that the 3570k will your best bet.

or you could just wait for the haswell i5 which will be released in less than a month

+1 forgot about Haswell. It doesn't seem to be much of an upgrade so i've suppressed all memories of it :P

Just get Haswell. Ivy Bridge will just get discontinued, without much of a price cut (just as it happened with Sandy Bridge). I'm building a new rig this summer and I would only go for the 3570K over the 4670K (or 3570K over 2500K) if there was a 50$+ price gap.
