You can't have too much power supply. The only reason to get lower wattages is to save money if you don't actually need the higher wattage. Since it's bundled, that's not a concern.

There are enough 800w PSUs that trip with a 3060. Better a high quality 550w than a crappy 800w. What's the make and model?

There is no such thing as to much wattage. I would actually say its a good thing that you are getting that PSU because it means you can upgrade your components down the road.
